1 cup cooked sweet potatoes, mashed
1/2 cup mashed banana
1 cup evaporated milk
2 tablespoons packed brown sugar
2 egg yolks, beaten
1/2 teaspoon salt
1/4 cup raisins
1 tablespoon sugar
1 teaspoon ground cinnamon
Preheat an oven to 300 degrees F.
In a medium mixing bowl, combine the mashed bananas and sweet potatoes. Add the evaporated milk and stir until smooth.
Stir in the brown sugar, beaten egg yolks, and salt.
Pour this mixture into a nonstick casserole dish.
In a separate bowl, combine the raisins, sugar, and cinnamon. Sprinkle this over the top of the banana and potato mixture.
Bake 45-50 minutes or until a toothpick placed in center comes out clean.
